Chia is packed full of omegas so when you combine it with good fats like coconut and top with fresh organic fruits and nuts etc., you have one tasty power pack of nutrition.
This is super easy to make – let your creative side run wild. You can add any of your favourites eg. cacao, turmeric, Matcha to the Chia Pudding mixture and create the Chia Pudding of your dreams.
This is another quick and easy make ahead breakfast or snack that you can have in your fridge ready to grab and go. I make a weeks worth, put it into individual jars, top with my yoghurt of choice (usually coconut) and seal. When I need one, I just top it with my favourites (whatever is in season) and its ready to eat or be packed in my bag for later.
Eating healthy delicious food is not as difficult as you may think. To avoid reaching for the quick processed snacks when you are hungry, have these in the fridge ready to go. You can drizzle some maple syrup or honey on it (if you have a serious sweet tooth) to satisfy your cravings. The good fats in it will help to satisfy your hunger, help balance your blood sugar and settle your cravings.
Chia pudding is light, delicious and definitely one of my “go to” breakfasts.
COCONUT CHIA PUDDING
- 1/2 cup white chia seeds Black chia is fine
- 500 ml milk of coconut milk I use Coco Quench but any nut milk will work
- 1 tspn vanilla powder or extract
- 1 pinch of good quality salt
Whisk all ingredients together. Let stand for 5 minutes and then whisk again.
Place in fridge until set. (I usually make the night before and leave in fridge until morning.)
Place the amount desired in a glass or bowl and top with yoghurt of choice and chopped nuts and seasonal fruit.
Be creative and use your favourite toppings ie. seeds, shredded coconut, sweet dukkah, berry compote etc.
To get super organised for your week, Chia pudding can be place in single serving jars and topped with yoghurt and sealed. Then just top them with your favourite toppings as you use them.
